Authentic Chicken Dum Biryani Recipe: A Step-by-Step Guide to Making the Perfect Biryani at Home




Chicken dum biryani is a delicious and hearty dish that is popular in many parts of the world. It is made by layering seasoned chicken, rice, and spices, and then cooking it slowly over low heat. This method of cooking, known as "dum," allows the flavors to meld together and creates a dish that is rich, fragrant, and satisfying.


To make the perfect chicken dum biryani, you will need a few key ingredients and a bit of patience. Here is a simple recipe that you can use to make this delicious dish at home.


Ingredients:


1 lb boneless chicken thighs, cut into bite-sized pieces

2 cups basmati rice

1 onion, finely chopped

2 cloves of garlic, minced

1 inch ginger, minced

2 tablespoons vegetable oil

1 teaspoon cumin seeds

2 bay leaves

2 cinnamon sticks

4 green cardamom pods

4 cloves

1 teaspoon turmeric powder

1 teaspoon red chili powder

1 teaspoon coriander powder

1 teaspoon cumin powder

Salt to taste

2 cups water

1 cup yogurt

1/4 cup fresh cilantro, chopped

1/4 cup fresh mint leaves, chopped

1/4 cup ghee or butter

1/4 cup fried onions

Few saffron strands


Instructions:


Rinse the rice in several changes of water until the water runs clear. Soak the rice in enough water for 30 minutes.


Heat the oil in a heavy-bottomed pot or Dutch oven over medium heat. Add the cumin seeds, bay leaves, cinnamon sticks, green cardamom pods, and cloves and fry for a few seconds until fragrant.


Add the chopped onion, garlic, and ginger and sauté until the onion is translucent.


Add the chicken and sauté for about 5 minutes or until the chicken is cooked through.


Add the turmeric powder, red chili powder, coriander powder, cumin powder and sauté for a minute.


Drain the rice and add it to the pot. Stir well to combine.


Add the water, yogurt, cilantro, mint leaves, saffron strands, and salt to taste and stir well.


Bring the mixture to a boil, then reduce the heat to low and cover the pot with a tight-fitting lid.


Cook the biryani for about 20 minutes or until the rice is cooked and the liquid is absorbed.


Turn off the heat and let the biryani sit for 5 minutes.


Heat the ghee or butter in a small pan and fry the onions until golden brown.


Fluff the biryani with a fork and sprinkle the fried onions on top.


Serve the biryani hot with raita, chutney or any other side dishes.
